“To become a Chef? I never imagined!”
Having an English Major from Waterloo University, Lot had her heart set to becoming a teacher. After graduating, being a restauranteur was certainly not immediate in her radar.
Her future took a turn for the best when she accepted a role in the kitchen at London’s West Haven Country Club. Within her first year Executive Chef Darryl recognized that Lot had the “it” factor in cooking, so promoted her as his sous-chef and took her under his wings. For five years Lot learnt extensively the groundworks to champion proper preparation and food management, while skillfully presenting delicious dish to countless guests.
When the decision to partner in a restaurant with her sister prevailed, it became clear that it would be a necessity to take her leap of faith. "Choosing to venture into a restaurant was difficult but I needed to re-assure that our families would thrive. I knew by having the support of my sisters we would be ok”, says Lot.
With family by her side, they searched till they stumbled into an opportunity that was quite the perfect fit in this cozy town - Lucan.
Champagne Chansamone
Born into a family with thirteen siblings, Champagne learned at a very young age that her calling was to excel in the kitchen and provide the support to her family. She quickly grasped the Eastern-dish concepts by means of cooking family recipes in large-size meals that her family would absolutely enjoy.
When asked Champagne what would be the one particular reason for her wanting to cook so well, she credits her siblings. “My 5 brothers were the ones encouraging me to hone into my cooking skills. Ever since young, when preparing meals I would be thinking about what my older brothers liked and always admired their praises", Champagne explains.
Her curiosity for cooking tasty home-style Thai dish never ends as she continues to learn from many great cooks and would always question them, "what makes it (a particular dish) delicious?".
Now as a restauranteur, Champagne has realized her dream -- to catapult her obsession in crafting delicious food to more people other then just her immediate family. And she certainly has an exceptional way of showing her dedication:
